Rachel's Avocado Brunch
Ingredients:
Avocado
Watercress and Rocket leaves (or whatever you prefer)
English white muffins
Smoked salmon
Black pepper
Lemon
Olive Oil

Method:
Halve, peel and slice the avocado
Halve and toast the muffins, then butter them
Place some salad leaves on top of each muffin
Add half a sliced avocado on each muffin
Add smoked salmon (optional)
Add black pepper and freshly squeezed lemon juice over the top then drizzle with some olive oil
